Winery Overview
Discover Scilio Winery, in the “Contrada Valle Galfina”, close to the town of Linguaglossa.
The Scilio estate has through the years developed its activities in the wake of the ancient Etna winemaking tradition, now, a modern and rational criteria of cultivation and wine production. Without erasing the wise and valuable work done by the previous generations, the Scilio family has shaped this beautiful valley by identifying indigenous grape varieties capable of enhancing the nature and vigour of these places.
The wines are made exclusively from grapes grown on their estate and directly fermented in the ancient cellar of 1815. Here, the wines are subjected to a delicate phase of refinement to achieve the best degree of harmony and balance of their constituents. The result of a lot of patience and perseverance are the typical notes of Etna wine making, the smell of Carricante and Catarratto for the white, the velvety elegance of Nerello Mascalese for the red and rosé wines.
The first wine cellar is dated 1815 and is today a cultural rural quality. It is today still used for the processes of wine production and bottling. A second wine cellar, recently completed, is a model of advanced technology.
Scilio wine production is characterised by the organic cultivation of the vineyard. The management of the soil, therefore, is one of the key factors to ensure the preservation of agricultural soil, its fertility and, at the same time, the maintenance of the vines in perfect equilibrium for the production of quality grapes.
The management of the soil is one of the predominant points that characterise agriculture and therefore, organic viticulture. Respect for the environment and the use of solar energy also represent two other distinguishing features of the modus operandi of the Scilio company.
There is also wine hotel on-site, which has 8 rooms with accommodation for 28 persons, a dining room, a room for wine tasting and a fully equipped meeting/conference room
Visitors can enjoy wine tastings, tour the winery and participate in cooking classes carefully following the sicilian art of cooking and using the local typical ingredients of the traditional recipes.
